Creamy Lemon Basil Shrimp

  1. Heat olive oil in a large cast iron skillet over medium high heat.
  2. Add shrimp and allow them to start to get pink for a couple of minutes.
  3. Add basil, garlic, lemon juice, lemon zest, salt and pepper.
  4. Let that mixture get fragrant for 30 seconds.
  5. Pour in white wine and let it cook off for another 2 minutes or so.
  6. Then stir in ricotta and Parmesan.
  7. Let mixture bubble together for a minute while you stir, then its all done!
  8. Serve it immediately over cooked brown rice with some pretty basil ribbons on top and an extra wedge of lemon.
  9. Enjoy!
