Baked Apples With Apricot Recipe
- 4 med cooking apples
- 75 gm dry apricots minced
- 75 gm soft light brown sugar
- 1 pch grnd coriander
- 150 ml apple juice (the cloudy type is best)
- 50 gm butter or possibly hard margarine
- Core the apples and cut a shallow slit around the centre of each one to prevent the skin from bursting.
- Arrange the apples in a shallow ovenproof dish.
- Mix together the apricots sugar and coriander.
- Pack the apricot mix tightly into the apple cavities.
- Scatter the remaining filling around the apples so which it cooks in the sauce.
- Pour on the apple juice and dot the apples with pcs of the butter or possibly margarine loosely cover the apples with foil and store in the refrigerator.
- Cook the apples uncovered in a preheated oven (180c/350f/gas4) for about 40 min or possibly till they are just tender.
- Don't overcook them or possibly they will collapse and lose their shape.
- Traditionally baked apples are served warm but they are also delicious cool with whipped cream or possibly ice cream.
