Aunt Jane'S Stolen Chicken Casserole
- 1 fryer
- 12 oz. vermicelli
- 1 lb. Velveeta cheese
- 1 can English peas, drained
- 1 can mushrooms, drained
- 1 can Ro-Tel tomatoes, mashed
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 stick margarine
- 1 1/2 c. grated Cheddar cheese
- Boil chicken in salted water.
- Skin and debone chicken.
- Cook vermicelli in chicken broth until almost tender (not soft) and drain.
- Saute onion and bell pepper in margarine.
- Cut Velveeta into cubes and add to hot vermicelli.
- Mix vermicelli and other ingredients together.
- Spray casserole dish with Pam and pour in mixture.
- Top with Cheddar cheese.
- Bake at 350u0b0 until cheese melts.
- Serves 50 finicky eaters or 15 normal eaters or 8 people who are going on a diet Monday.
