Pesto Potato Salad
- 6 medium potatoes, peeled
- 12 cup mayonnaise
- 3 tablespoons pesto sauce
- 14 cup pine nuts, toasted
- 1 cup fresh basil leaf, chopped
- shaved parmesan cheese, garnish
- Cook potatoes in boiling salted water until just tender, drain & cut into cubes and allow to cool.
- Mix the mayo & pesto & carefully spoon through the potatoes, when fully cool, mix through pinenuts & basil and garnish with parmesan cheese.
