Pesto Potato Salad

  1. Cook potatoes in boiling salted water until just tender, drain & cut into cubes and allow to cool.
  2. Mix the mayo & pesto & carefully spoon through the potatoes, when fully cool, mix through pinenuts & basil and garnish with parmesan cheese.
