sunshine key lime pie
- 4 large eggs separated
- 1/2 cup fresh lime juice
- 3/4 cup heavy cream
- 1/2 tsp cream of tartar
- 1 tsp grated lime peel
- 1 can eagle brand sweetened condensed milk 14"oz
- 1/2 cup sugar
- 1 unbaked pie crust (9"inch)
- preheat oven to 350, and bake on 350
- beat egg yolks in med.bowl on low speed if electric mixer.
- gradually beat in sweetened condensed milk and lime juice until smooth.
- blend in cream, lime peel and 2 or 3 drops food coloring.
- pour into unbaked pie crust.
- bake for 25 minutes.remove pie from oven.
- beat egg whites and cream tartar in med.bowl on high speed until soft peaks from.
- gradually beat in sugar on med.speed.
- beat 4 minutes, or until sugaris dissolved and stiff glossy peaks forms
- spread over hot pie, carefully sealing to edge of crust to prevent meringue from shrinking.
- bake for additonal 15 minutes or until meringue is lightly browned.
- cool 1 hour on wire rack.chill at least 3 hours before serving.
