sunshine key lime pie

  1. preheat oven to 350, and bake on 350
  2. beat egg yolks in med.bowl on low speed if electric mixer.
  3. gradually beat in sweetened condensed milk and lime juice until smooth.
  4. blend in cream, lime peel and 2 or 3 drops food coloring.
  5. pour into unbaked pie crust.
  6. bake for 25 minutes.remove pie from oven.
  7. beat egg whites and cream tartar in med.bowl on high speed until soft peaks from.
  8. gradually beat in sugar on med.speed.
  9. beat 4 minutes, or until sugaris dissolved and stiff glossy peaks forms
  10. spread over hot pie, carefully sealing to edge of crust to prevent meringue from shrinking.
  11. bake for additonal 15 minutes or until meringue is lightly browned.
  12. cool 1 hour on wire rack.chill at least 3 hours before serving.
