Grandmother's Nice 'N Easy Potato Soup Recipe

  1. Heat butter in a large, heavy pot.
  2. Add in celery and onions.
  3. Saute/fry till wilted and onion is opaque.
  4. Add in 2 qts of water and bouillon cubes.
  5. Simmer till bouillon dissolves.
  6. Add in potatoes.
  7. Add in more water if needed to just cover vegetables.
  8. Simmer till potatoes are tender.
  9. Scoop out 1 1/2 c. of potatoes and mash into paste.
  10. Return them to pot and stir.
  11. Add in sufficient lowfat milk to give soup a white milky look.
  12. Lower heat and simmer very slowly stirring often.
  13. Soup will thicken slightly.
  14. Store leftovers well covered.
  15. If soup becomes too thick when reheated add in a little lowfat milk.
