Pasta And Vegetable Salad
- 2 c. uncooked macaroni
- 1/2 c. vegetable oil
- 1/4 c. lemon juice concentrate
- 1/4 c. water
- 1 (.7 oz.) pkg. Italian salad dressing mix
- 1 1/2 c. small broccoli flowerets
- 1 c. coarsely shredded carrots
- 1 1/2 c. sliced zucchini
- 1/4 c. chopped onions
- 1/3 c. Parmesan cheese
- lettuce leaves (optional)
- Cook macaroni according to directions.
- In a small jar with tight-fitting lid, combine oil, lemon juice, water and salad dressing mix and shake well.
- In large bowl, combine all ingredients except lettuce.
- Toss with dressing.
- Cover.
- Chill several hours or overnight, stirring occasionally.
- Serve on lettuce.
- Refrigerate leftovers.
