sloppy lentils
- 1 cup brown lentils
- 2 cup water
- 1 small carrot, diced
- 1 onion, diced
- 1 stalk celery, diced
- 3/4 cup ketchup
- 1/2 cup chili sauce
- 2 tbsp prepared yellow mustard
- 1 tbsp minced garlic
- 1/4 tsp red chili flakes, optional
- 1/4 tsp (scant) chili powder
- 1 pinch salt and pepper
- 1 tomato, diced
- 1 hamburger buns
- 1 slice sliced green (spring) onions, for garnish
- In medium saucepan, bring to a boil water and lentils.
- Simmer 10 minutes.
- Add carrots, onion, celery, and garlic and continue to simmer 10 minutes.
- When water is nearly absorbed, add chili sauce, ketchup, mustard, red pepper flakes, chili powder, salt, and pepper.
- Continue to simmer until sauce is thickened, about 8-10 minutes.
- Stir in tomato and serve in sandwich buns with green onions sprinkled on top.
