sloppy lentils

  1. In medium saucepan, bring to a boil water and lentils.
  2. Simmer 10 minutes.
  3. Add carrots, onion, celery, and garlic and continue to simmer 10 minutes.
  4. When water is nearly absorbed, add chili sauce, ketchup, mustard, red pepper flakes, chili powder, salt, and pepper.
  5. Continue to simmer until sauce is thickened, about 8-10 minutes.
  6. Stir in tomato and serve in sandwich buns with green onions sprinkled on top.
