Granny's Red Eye Gravy
- 1 lg. slice of country ham
- 1/4 cup of black coffee
- 1 cup of water
- Fry the ham at a medium-low temperature in a little oil until brown on both side.
- Remove ham to a plate.
- In the grease, add the coffee.
- Bring to a boil.
- Pour out liquid into another bowl.
- Add a cup of water and bring to boil.
- Stir the brown bits on the bottom of the skillet.
- Pour this into the bowl and mix thoroughly.
- Put back into the skillet and boil another couple of minutes to reduce.
