Scrambled Eggs with Tomatoes
- 2 eggs
- 1 tbsp olive oil
- 1 small to medium tomato
- 1 salt&pepper to taste
- 1 tsp oregano (optional)
- Beat the eggs in a bowl and chop the tomato.
- Heat a small frying pan and add the olive oil.
- Once the oil has heated add the tomatoes and cook for half a minute.
- Add the eggs to the pan and lower the heat.
- Fold the eggs using a wooden spoon until set.
- Add salt&pepper and the oregano (optional).
- Serve with warm arabic bread or toast.
