Scrambled Eggs with Tomatoes

  1. Beat the eggs in a bowl and chop the tomato.
  2. Heat a small frying pan and add the olive oil.
  3. Once the oil has heated add the tomatoes and cook for half a minute.
  4. Add the eggs to the pan and lower the heat.
  5. Fold the eggs using a wooden spoon until set.
  6. Add salt&pepper and the oregano (optional).
  7. Serve with warm arabic bread or toast.
