Spicy Black Eyed Pea Fritters

  1. Heat olive oil in a skillet over medium-high heat.
  2. In the bottom of a large mixing bowl, lightly beat your egg with a fork.
  3. Add mashed black eyed peas, jalapeno, cheese, salt, pepper, and flour and stir until well-mixed.
  4. With a large spoon, scoop mixture and drop into the hot skillet (I fit 3 at a time into my skillet).
  5. Flatten the mounds slightly with the spoon and cook 2-3 minutes.
  6. Flip fritters and cook another 1-2 minutes.
  7. Transfer to a paper towel-lined plate to drain excess oil and cook the rest of the fritters the same way.
