Herb Crusted Roast Pork

  1. Preheat oven to 200C/400F.
  2. Brush the jam all over the pork loin.
  3. In a shallow dish, mix together the breadcrumbs, oats and thyme.
  4. Roll the pork in the mixture to cover it and place the pork into a baking dish.
  5. Press any excess breadcrumb mixture over the pork that may have fallen off.
  6. Drizzle with the olive oil and season with salt and pepper.
  7. Roast for 1 1/4 hours until cooked through.
  8. Leave to rest, uncovered for 10 minutes.
  9. Slice and serve.
