Perfect Chicken Cacciatore
- 16 ounces italian plum (roma) tomatoes crushed
- 13 cup white wine dry
- 1 each onions small, chopped
- 1 each green bell peppers small, seeded and chopped
- 2 each garlic cloves minced
- 1 each bay leaves
- 1/2 teaspoon fennel seeds crushed
- 1 teaspoon oregano crushed
- 1/2 teaspoon coriander ground
- 1/4 teaspoon cinnamon ground
- 1/2 teaspoon red pepper flakes crushed
- 2 pounds chicken, whole cut into pieces, skin and fat removed OR 2 whole chicken breasts
- 1/2 each lemon juice of
- 1 teaspoon vegetable seasoning fat free
- Place tomatoes in small saucepan.
- Add all remaining ingredients except chicken, lemon juice, and vegetable seasoning.
- Season chicken with lemon juice and vegetable seasoning.
- Arrange chicken pieces in baking dish sprayed with nonstick spray.
- Cover and bak in preheated 350F (180C) oven for 45 minutes, or until tender.
