Pickled Shrimp

  1. Tie celery and pickling spice loosely in a piece of cheesecloth.
  2. Place in boiling water and simmer for about 10 minutes.
  3. Add shrimp; simmer for 10 minutes.
  4. Drain.
  5. Arrange sliced onions and shrimp in alternate layers in a bowl.
  6. Add bay leaves.
  7. Combine remaining ingredients.
  8. Mix thoroughly and pour over onions and shrimp.
  9. Cover and chill for about 24 hours, stirring occasionally.
