Pickled Shrimp
- 1 1/2 lb. raw, cleaned shrimp
- 1/2 c. chopped celery leaves
- 1/4 c. whole mixed pickling spice
- 2 qt. boiling water
- 2 c. sliced onions
- 2 Tbsp. capers and liquid
- 1 1/2 tsp. celery seed
- 5 bay leaves
- 1 1/2 c. salad oil
- 1 1/2 tsp. salt
- 1 1/2 c. white vinegar
- 1/4 c. chopped pimento
- 1/2 tsp. hot sauce
- Tie celery and pickling spice loosely in a piece of cheesecloth.
- Place in boiling water and simmer for about 10 minutes.
- Add shrimp; simmer for 10 minutes.
- Drain.
- Arrange sliced onions and shrimp in alternate layers in a bowl.
- Add bay leaves.
- Combine remaining ingredients.
- Mix thoroughly and pour over onions and shrimp.
- Cover and chill for about 24 hours, stirring occasionally.
