Mashed Zucchini and Tomatoes

  1. Fry the onions in the oil until golden and stir in the garlic and cumin.
  2. Add the zucchini, salt, pepper, vinegar, ground chili pepper, and tomatoes.
  3. Put the lid on and cook for about 10 minutes without added water, until the zucchini slices are very soft.
  4. Mash with a fork or a potato masher and serve at room temperature.
