Mandarin Orange Cake
- 1 yellow cake mix
- 4 eggs
- 1 (11 ounce) can mandarin oranges, with juice
- 1 cup oil
- 1 (12 ounce) container Cool Whip
- 1 (3 1/2 ounce) box vanilla instant pudding mix
- 1 (20 ounce) can crushed pineapple, with juice
- Preheat oven to 350 degrees F.
- Mix first four ingredients in large bowl with electric mixer for about 2 minutes.
- Pour into 11 x 13 inch baking pan that has been sprayed with Pam.
- Bake in preheated oven 32-35 minutes, or until cake pulls away from sides and toothpick inserted in center of cake comes out clean.
- Let cool completely.
- For topping, mix Cool Whip, pudding mix and pineapple with juice with mixer till blended.
- Spread on cooled cake.
- Keep refrigerated.
