Mandarin Orange Cake

  1. Preheat oven to 350 degrees F.
  2. Mix first four ingredients in large bowl with electric mixer for about 2 minutes.
  3. Pour into 11 x 13 inch baking pan that has been sprayed with Pam.
  4. Bake in preheated oven 32-35 minutes, or until cake pulls away from sides and toothpick inserted in center of cake comes out clean.
  5. Let cool completely.
  6. For topping, mix Cool Whip, pudding mix and pineapple with juice with mixer till blended.
  7. Spread on cooled cake.
  8. Keep refrigerated.
