Simmered Spring Potatoes and Green Beans

  1. Rinse the spring potatoes in running water.
  2. Chop them in half and soak in water to get rid of the bitterness.
  3. Boil the green beans and chop into thirds.
  4. Heat vegetable oil in a pot.
  5. Wipe excess water off the potatoes from step 1 and add to the pot.
  6. Stir-fry for about 8 to 10 minutes.
  7. Cook until the potatoes are translucent and slightly browned.
  8. Add ingredients to the potatoes in step 4.
  9. Simmer for about 15 minutes.
  10. Take the lid off.
  11. Turn the heat higher and continue simmering.
  12. Mix the broth with the potatoes.
  13. Add green beans from step 2 a few minutes before turning the heat off.
