Savory Vegetable Crepes
- 2 c. shredded cabbage
- 1 c. thinly sliced celery
- 1/2 green pepper, thinly sliced
- 1/4 c. onion, finely chopped
- 1/4 c. sliced mushrooms
- 1 Tbsp. sugar
- 1/4 c. butter
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 8 hot crepes
- To use food processor:
- Place slicing blade in processor. Slice mushrooms using food pusher to push food through chute, then stand celery stalks, green pepper half and wedge of onion in food chute.
- Push through with pusher.
- Remove slicing disc.
- Replace with shredding disc with sliced vegetables still in food container.
- Push through, shredding.
- Remove all vegetables to skillet to cook.
- Cook vegetables and sugar in butter in covered skillet over low heat until veggies are tender.
- Stir in lemon juice.
- Salt and pepper.
