Cafe Beaujolais Sour Cream Waffles Recipe
- 2 Tbsp. Butter
- 1 med Apple, peeled, cored and Sliced
- 1/8 tsp Cinnamon
- 1 1/2 tsp Brown sugar
- 2 c. Flour
- 2 1/2 tsp Baking pwdr
- 3/4 tsp Baking soda
- 1/2 tsp Salt
- 1 1/2 Tbsp. Sugar
- 4 x Large eggs, separated
- 1 c. Lowfat sour cream
- 1 1/2 c. Lowfat milk
- 3/4 c. Plus 2 tbsp. melted butter Or possibly corn oil
- 1/2 c. Minced toasted pecans
- Sauteed Apples: Heat butter in a 8" skillet over moderate heat.
- Add in apples and cook,stirring frequently,2 to 3 min.Stir in cinnamon and sugar;reduce heat to low and cook,covered,2 to 3 min,till tender and golden.Cold slightly.
- Waffles: Sift together dry ingredients.Beat egg yolks with lowfat sour cream,lowfat milk and melted butter in separate bowl till blended.Stir into dry ingredients till blended well.Stir in apples and pecans.
- Beat egg whites till stiff,moist peaks form.Stir about 3 tbsp.
- of the beaten whites into the batter,then gently mix in remaining egg whites till just combined.
- Pour or possibly ladle batter over center 2/3 of warm waffle iron.Close lid cook about 4 min,till steam no longer emerges from the crack.
- Remove waffle.Keep hot in a hot oven while you cook the rest.
- Makes 8 waffles.
