Lamb on White Bean Puree
- 12 trim lamb cutlets
- 1 tablespoon olive oil
- 2 teaspoons fresh thyme leaves
- finely grated rind of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- black pepper
- 2 x 400g can cannellini beans, drained and rinsed
- 2 cloves garlic
- 1/4 cup KRAFT FREE* Italian Dressing
- rocket leaves and roasted red capsicum strips, to serve
- Coat cutlets in combined oil, thyme, lemon rind and pepper.
- Allow to marinate for 20 minutes.
- Place onto a pre-heated chargrill plate over medium high and cook for 2-3 minutes each side.
- Place beans and garlic into a food processor, and process until smooth.
- Gradually add dressing with the motor running.
- Season with extra pepper.
- Transfer to a microwave-safe bowl, cover and heat on High for 1-2 minutes until heated through.
- Serve lamb cutlets on a bed of puree accompanied by rocket leaves and roasted capsicum strips.
- Drizzle with extra dressing if required.
