Lamb on White Bean Puree

  1. Coat cutlets in combined oil, thyme, lemon rind and pepper.
  2. Allow to marinate for 20 minutes.
  3. Place onto a pre-heated chargrill plate over medium high and cook for 2-3 minutes each side.
  4. Place beans and garlic into a food processor, and process until smooth.
  5. Gradually add dressing with the motor running.
  6. Season with extra pepper.
  7. Transfer to a microwave-safe bowl, cover and heat on High for 1-2 minutes until heated through.
  8. Serve lamb cutlets on a bed of puree accompanied by rocket leaves and roasted capsicum strips.
  9. Drizzle with extra dressing if required.
