Chocolate Mint Fudge

  1. In a 2-quart micro-proof bowl, combine 3/4 cup sweetened condensed milk with chocolate chips.
  2. Microwave on High for 3 minutes or until chips are melted.
  3. Stir in vanilla.
  4. Spread half of the chocolate mixture evenly in the bottom of a foil lined 8-inch square pan.
  5. Place pan in the freezer.
  6. Set remaining mixture aside.
  7. In a 1-quart micro-proof bowl, combine remaining condensed milk with white chocolate.
  8. Microwave on High 1 to 3 minutes, stopping to stir occasionally until melted.
  9. Stir in peppermint extract.
  10. Divide peppermint mixture in half and color half with the red food coloring and half with the green food coloring.
  11. Spread pink mixture on top of chilled chocolate layer and return pan to freezer for 5 minutes.
  12. Remove pan from freezer and spread green mixture on top of pink layer.
  13. Return pan to the freezer to set the layers.
  14. If necessary, melt reserved chocolate mixture again in the microwave for 1 to 2 minutes.
  15. Spread on top of peppermint layer and return to the freezer to set.
  16. Cut into 1-inch squares.
  17. Store in refrigerator.
  18. Yields 64 squares of fudge.
