LG SPICY AUBERGINE STEW WITH CORIANDER AND MINT
- 2 tbsp olive oil
- 4 large garlic fine chop
- 2 large onion slice
- 2 large red cili or dry cili
- 2 tsp each cumin seed and coriander seed toasted and crush
- 3 large aubergine cut small chunk
- 2 tsp sugar
- 1 dash salt and pepper
- 1 tbsp roughly chop coriander leaf and mint
- 1 can plum Italian tomato
- in pan wth oil brown garlic and onion then add cumin seed and coriander seed till fragrant
- add aubergine and coat well ,then add tomato and sugar cover pot simmer for 30minute
- add salt and pepper and half of the mint and coriander leaf and cover for another 2minute
- serve hot and top remaining coriander leaf and mint
