Loretta Bianchi's Italian Biscotti Recipe
- 1/2 c. butter
- 1 c. sugar
- 3 Large eggs
- 3 c. sifted flour
- 3 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 tbsp. anise seed, crushed
- 2 tbsp. grated lemon rind
- 2 tbsp. grated orange rind
- 1 c. minced almonds or possibly walnuts
- Cream butter and sugar.
- Add in Large eggs one at a time till fluffy.
- Sift flour, baking pwdr and salt.
- Stir into butter mix till thoroughly mixed.
- Add in remaining ingredients and stir.
- Divide dough into 3 parts.
- Shape part into roll 1 1/2 inch diameter.
- Place on cookie sheet and flatten top slightly.
- Bake for 20 min.
- Remove from oven and cut into 3/4 inch slices.
- Return to oven, cut sides up and brown another 10-15 min.
- Cold on wire rack.
- Bake at 350 degrees.
- Makes 60 cookies.
