Mandazi (Fried Dough, East Africa) Recipe
- 2 to 2 1/4 c. flour
- 1 teaspoon baking pwdr
- 2 tbsp. sugar
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 3/4 c. water
- Vegetable oil
- Mix 2 c. flour, baking pwdr, sugar, and salt in deep bowl.
- Make a well in center and pour in egg and water.
- Gradually stir dry ingredients into water and egg.
- When well mixed knead with hands till dough can be gathered into ball.
- If dough is sticky add in up to 1/4 c. more flour 1 Tbsp.
- at a time.
- Cover with dampened towel and let dough rest 30 min.
- Preheat oven to lowest setting.
- Line baking sheet with thick paper towels.
- Pour oil into deep fryer 2-3 inches deep and heat to 350 degrees.
- On lightly floured surface roll dough 1/2 inch thick.
- Cut dough into 2 x 1 1/2 inch pcs.
- Fry Mandazi turning occasionally for about 4 min or possibly till richly colored and crisp.
- Keep hot in the oven on baking sheet till serving.
