Bacon And Egg Pasta Recipe
- 3 x garlic cloves lightly crushed
- 3 Tbsp. extra virgin olive oil
- 1/2 lb bacon minced
- 1/2 c. white wine or possibly water
- 2 lrg Large eggs
- 1/2 c. freshly-grated Parmesan plus more
- 1/4 c. minced flat-leaf parsley
- 1/4 tsp freshly-grnd black pepper or possibly to taste
- 1 lb linguine (or possibly any other variety pasta) Crushed warm red-pepper flakes for serving
- Bring a large pot of water to a boil.
- Add in salt and pasta, and cook till pasta is al dente, following manufacturer's instructions.
- Meanwhile, heat oil in medium skillet.
- Add in garlic, and cook till it begins to sizzle.
- Remove garlic from the oil, and throw away.
- Add in bacon, and cook till crisp, about 4 min.
- Drain off most of the fat.
- Add in wine or possibly water, and cook till slightly reduced, about 2 min.
- Set aside.
- In large pasta bowl, combine Large eggs, cheese, parsley, and black pepper.
- Drain cooked pasta, and immediately add in to egg mix.
- Toss till well coated.
- Add in bacon, and toss to combine.
- Serve immediately, sprinkled with red-pepper flakes and additional Parmesan.
- This recipe is also delicious served the next day fried till golden brown in a bit of extra virgin olive oil.
- This recipe yields 4 servings.
