Lompoc Chocolate Mousse
- 12 oz. semisweet chocolate chips
- 3/4 cup hot coffee
- 3 tbsp. orange liqueur such as Triple Sec
- 2 tbsp. sugar
- 2 cups whipping cream
- Place chocolate chips in a metal bowl or the top of a double boiler.
- Add the hot coffee and stir.
- (If the chocolate does not melt completely, place the bowl over hot, not boiling, water and stir until melted.)
- Remove from heat, add the orange liqueur and let the chocolate cool slightly (about 30 minutes).
- Combine sugar and whipping cream in a large bowl and beat with an electric mixer until stiff peaks form.
- When the chocolate is cooled, gently use a spatula to fold it into the whipped cream until well combined.
- Chill for at least 2 hours before serving.
