Bauer House Oatmeal Spice Muffins
- 2 cups quick oats
- 1 34 cups whole wheat flour
- 14 cup wheat germ
- 12 cup packed brown sugar or 12 cup sucanat
- 2 tablespoons baking powder
- 2 teaspoons salt
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 14 teaspoon clove
- 14 teaspoon allspice
- 1 12 cups milk
- 12 cup olive oil
- 12 cup applesauce
- 2 large eggs
- 1 cup dried currant (optional)
- Stir together dry ingredients (flour through allspice).
- Beat remaining ingredients with fork, except currants.
- Add to dry ingredients and stir until just combined.
- Stir in currants (if using).
- Let batter sit 5-10 minutes.
- Spoon into sprayed muffin cups and bake 20 minutes at 400 degrees, until golden and firm.
- Remove to rack to cool slightly, then serve warm.
