Whole Lotta Good Apple Nut Muffins
- 1 cup whole wheat flour
- 12 cup soy flour
- 14 cup flax seed meal
- 3 tablespoons vegetable oil
- 1 egg
- 1 cup sugar (I used Splenda mix)
- 12 cup milk
- 12 cup crushed nuts
- 1 cup finely diced apple
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- Mix dry ingredients together.
- Then combine milk, oil, and egg.
- Add dry ingredients to wet ones and stir.
- Mixture will be thick.
- Fold in nuts and apples.
- Fill 12 well-greased muffin tins 2/3 full.
- Bake at 350 degrees 17-20 minutes.
