Spicy Tofu

  1. Cut the tofu into cubes.
  2. Set aside on paper towels to drain.
  3. Heat a wok and add the tofu without oil.
  4. Stir-fry until heated through, but not crisp.
  5. Put in a mixing bowl.
  6. Add all the remaining ingredients except the assorted vegetables and lettuce.
  7. Mix thoroughly.
  8. Line a serving bowl with a layer of lettuce leaves and pour the saute over them.
  9. Serve surrounded by rice and assorted vegetables.
  10. *Heat uncooked rice over moderate heat until golden, stirring to prevent burning.
  11. When the colour is uniform, remove from heat, cool and gring to a powder.
  12. It is best to use a mortar and pestle.
  13. Roast whole chilies, stems too, in a dry wok until they darken.
  14. Be careful that they do not burn.
  15. Cool.
  16. Remove stems and seeds.
  17. Grind.
