Strawberry Walnut Loaf
- 3/4 c. butter or margarine
- 3/4 c. sugar
- 1 tsp. vanilla
- 4 eggs
- 2 c. all-purpose flour
- 1 c. uncooked oats
- 2 tsp. baking powder
- 1 tsp. salt
- 1 c. strawberry preserves
- 1/2 c. sour cream
- 1/2 c. chopped walnuts
- Heat oven to 350u0b0.
- Grease and flour a 9 x 5-inch loaf pan. Beat together the sugar, butter and vanilla until light and fluffy. Add eggs one at a time, beating after each addition.
- In medium bowl, combine flour, oats, baking powder and salt.
- In small bowl, combine preserves and sour cream.
- Add dry ingredients alternately with preserves to batter mixture, mixing well until well blended. Stir in nuts.
- Pour into prepared pan.
- Bake about 45 minutes; tent bread with foil and continue baking until wooden pick inserted in center comes out clean or 25 to 30 minutes.
- Cool 10 minutes and remove from pan.
