Sweet Sour Pickled Mushrooms

  1. In a glass bowl, combine the first seven ingredients.
  2. Add mushrooms and onion if using; toss to coat.
  3. Cover and refrigerate 8 hours or overnight.
  4. Sprinkle with red pepper and/or parsley if desired.
