Thea's Easy Rice Pudding With Dried Cherries or Raisins

  1. Preheat oven to 325 degrees.
  2. Place rice in a bowl, add all the ingredients, stir to mix.
  3. Pour into a greased baking dish or pan ( i use a 9x9) Bake 25 mins- 45 mins -- I check after the first 20 mins -- and stir -- then i check every 10 mins and stir because i don't like mine too much like custard -- so remove when it's your desired consistency -- then i sprinkle a bit more nutmeg on the top!
  4. I love mine cold but some of my family likes it warm -- and with whipped cream or vanilla ice cream on top lol!
  5. It's yummy!

rice, sugar, eggs, light coconut milk, vanilla, cherries, cinnamon, nutmeg
