Frozen Lemon Dessert

  1. Lightly butter a 13x9 pan.
  2. In a large bowl, mix the Graham cracker crumbs, sugar and melted butter with a fork.
  3. Press firmly into the bottom of the pan.
  4. Wipe out the bowl you just used.
  5. If using optional cream cheese, beat until well softened and smooth and add in the following.
  6. Mix the lemon pie filling, sweetened condensed milk and lemon juice well with mixer.
  7. For those of you who like an especially sharp Lemon flavor, you can also add in some freshly grated lemon zest.
  8. Fold in the drained fruit cocktail.
  9. Spread mixture over Graham cracker crust.
  10. Spread the container of cool whip over the lemon mixture evenly.
  11. Garnish with extra Graham cracker crust and sliced lemons if desired.
  12. Put in freezer for at least 4 hours before serving.
  13. Store left over dessert in freezer and let sit for about 20 minutes before serving.
