Dried-Beef Gravy
- 3 tablespoons unsalted butter
- 1/4 pound dried beef, pulled apart into shreds (Knauss brand is good)
- 2 tablespoons flour
- 2 cups milk
- 4 slices country bread or 4 buttermilk biscuits
- In a skillet, heat the butter until foamy.
- Add the dried beef and fry until edges are browned.
- Sprinkle with flour, stirring to coat beef with flour.
- Cook until flour is just starting to color, then slowly add milk, stirring to smooth any flour bits and thicken sauce.
- Bring to a boil and cook until there is no longer any taste of flour.
- Meanwhile, toast the bread.
- Place the toast or warm biscuits on plates and spoon gravy on top.
- Serve.
