Yellow Lentil & Root Vegetable Stew
- 12 cup chopped onion
- 2 tablespoons olive oil
- 2 tablespoons tarragon leaves
- 1 tablespoon coriander powder
- 1 dash cayenne pepper (optional)
- 4 cups vegetable broth
- 1 cup yellow lentils
- 3 parsnips, peeled & chopped
- 4 carrots, peeled & chopped
- salt, to taste
- Cook the onion in oil until translucent.
- Add the spices, root vegetables, lentils & broth and cook over medium heat about 30 minutes or until the ingredients are softened.
- Tastes even better with a dollop of sour cream or a small pat of goat cheese.
