Yellow Lentil & Root Vegetable Stew

  1. Cook the onion in oil until translucent.
  2. Add the spices, root vegetables, lentils & broth and cook over medium heat about 30 minutes or until the ingredients are softened.
  3. Tastes even better with a dollop of sour cream or a small pat of goat cheese.
