Microwave Texas-Style Hot Chili
- 5 slices bacon
- 8 oz. Italian sausage links
- 1 1/2 lb. beef chuck roast, diced
- 1 c. chopped onion
- 1/2 c. chopped green pepper
- 1 clove garlic, crushed
- 1 dried chili pepper, crumbled
- 1 or 2 jalapeno peppers, chopped
- 1 to 1 1/2 Tbsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. dried oregano, crushed
- 2 c. water
- 1 (12 oz.) can tomato paste
- 1 (16 oz.) can pinto beans
- shredded American cheese
- Place bacon on microwave roasting rack in 12 x 7 1/2 x 2-inch baking dish.
- Cook on High for 4 1/2 to 5 minutes.
- Crumble bacon and set aside.
- Slice sausage.
- Cook in 3-quart casserole on High for 5 minutes, stirring 3 times.
- Drain off fat.
- Add beef, onion, green pepper, garlic, chili pepper, jalapeno pepper, chili powder, salt, oregano, water and tomato paste.
- Cook, covered, on High for 45 minutes.
- Drain beans and add to chili.
- Cook, covered, on High for 30 to 35 minutes.
- Can be served with shredded American cheese.
- Makes 8 servings.
