Mahi-Mahi Stuffed Lobster Tails
- 2 Tablespoons Butter
- 2 Tablespoons Olive Oil
- 1 clove Chopped Garlic
- 1/4 cups Chopped Onion
- 1/2 cups Milk Or Cream
- 1/4 teaspoons Curry Powder
- 1/4 teaspoons Black Pepper
- 1/4 teaspoons White Pepper
- 1 Tablespoon Parsley, Plus More For Garnish
- 1 Tablespoon Basil Plus More For Garnish
- 2 drops Liquid Smoke
- 1/4 cups Chopped Sun Dried Tomatoes
- 2 Tablespoons Sherry
- 1/4 cups Grated Parmesan Cheese Plus More For Garnish
- 13 cups Grated Cheddar Cheese
- 1 pound Mahi-Mahi Or Any White Fish
- 3/4 cups Bread Crumbs
- 2 whole Large Lobster Tails
- In a sauce or frying pan, add butter, oil, garlic and onions.
- Heat to a low simmer to caramelize onions.
- Add milk, spices, herbs, liquid smoke, sun dried tomatoes and sherry.
- Continue heating.
- Stir in cheeses and mix until melted.
- Remove from heat, add cubed fish and bread crumbs mix and divide into two.
- Form into two balls and pack into lobster tails.
- Place tails in a greased baking dish and garnish tops with some Parmesan cheese, parsley and basil.
- Cook at 375 degrees F for 35 minutes.
