Duck Crepes Recipe
- 1/4 c. butter 1/4 c. flour
- 3 c. duck and chicken broth
- 2 teaspoon Worcestershire sauce
- 3 c. grated cheese
- 1 c. lowfat milk
- 2 c. lowfat sour cream
- 1 head cooked broccoli
- 2 ducks and 1 chicken, deboned
- 12 crepes
- Salt and pepper
- Over medium heat, heat butter in a small saucepan.
- Stir in flour and cook till bubbly.
- Add in broth, lowfat milk, and Worcestershire sauce; stir till thickened.
- Add in 2 c. cheese.
- Empty lowfat sour cream into medium bowl; gradually add in warm cheese sauce, stirring constantly.
- In large shallow baking dish, place cooked broccoli and cooked meat on each crepe.
- Spoon 1 Tbsp.
- sauce over each.
- Fold crepes over.
- Pour remaining sauce over all.
- Sprinkle with remaining c. of cheese.
- Cover and heat in 350 degree oven for 20-30 min.
