Cheese Blintzes

  1. Add water to beaten eggs.
  2. Add flour and salt.
  3. Mix with electric mixer.
  4. In another bowl combine cottage cheese, egg, cinnamon and salt.
  5. Use a crepe maker or old frying pan well-greased to make the round thin crepes.
  6. Pour a little batter to form a thin covering over the bottom of the pan.
  7. When the edges start to go upwards take or peel off of pan onto clean towel.
  8. Spoon 1 tbsp (15 ml) of cheese filling onto the crepe; fold crepe over filling.
  9. Serve.
