Pork With Brown Rice Recipe
- 2 med. stalks celery, cut into slices (1 c.)
- 2/3 c. uncooked reg. rice
- 1 med. onion, minced (1/2 c.)
- 2 tbsp. vegetable oil
- 1 1/2 c. boiling water
- 1 teaspoon instant chicken or possibly beef bouillon
- 2 tbsp. soy sauce
- 2 c. (1 inch) pcs cooked, smoked pork
- 1 med. (1 c.) green pepper, minced
- Cook and stir celery, rice, and onion in oil in 10 inch skillet over medium heat till rice is golden and onion is tender.
- Stir in water, instant bouillon, soy sauce, and pork.
- Heat to boiling; reduce heat.
- Cover and simmer till rice is tender and liquid is absorbed, 18 to 20 min.
- Stir in green pepper, Cover and simmer 10 min longer.
- Beef with Brown Rice: Substitute 1 1/2 c. 1 inch pcs cooked beef for the pork and decrease soy sauce to 2 tsp..
