Cream Cheese And Fruit Salad
- 1 (8 oz.) cream cheese, softened
- 1 envelope Knox unflavored gelatine
- 1 medium can crushed pineapple (with juice)
- 3/4 c. sugar
- 1/3 c. cold water
- 1 can drained mandarin oranges
- 1 small jar maraschino cherries (reserve juice)
- 1 1/2 c. mini marshmallows
- 3/4 c. Angel Flake coconut (optional)
- In a small saucepan, bring pineapple and sugar to boil and then turn off.
- Mix gelatine in water until dissolved.
- In large bowl, cream the softened cream cheese.
- Gradually stir in the hot pineapple, then add gelatine and mix well.
- Add the mandarin oranges, cherries, 2 tablespoons of cherry juice, marshmallows and coconut.
- Stir well.
- Cool and refrigerate until mixture is set. Keep refrigerated to maintain firmness.
