Shrimp Fettuccini
- 1 lb. peeled shrimp
- 1 stick butter
- 1 medium onion, chopped
- 1 small bell pepper, chopped
- 1 rib celery
- 1 pod garlic
- 1 jalapeno pepper, chopped
- 1/4 c. flour
- 1 small box Velveeta cheese
- 1 c. half and half noodles (1/2 pkg.)
- Saute vegetables in butter for 15 minutes, covered.
- Add flour and cook 10 minutes.
- Add shrimp and cook 15 minutes.
- Add 1/2 Velveeta cheese (chopped) and cook until melted.
- Add jalapeno pepper and cook 10 minutes.
- Add half and half and cook until heated.
- Season to taste.
- Boil noodles and add to shrimp mixture. Put in a large, well greased casserole.
- Top with rest of Velveeta and sprinkle with Parmesan cheese and parsley.
- Bake at 350u0b0 until cheese melts and is bubbly.
