Eggplant Mediterranean Style
- 2 small eggplants, both ends trimmed (about 1 pound)
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 tablespoon paprika
- 1 tablespoon ground ginger
- 1 tablespoon garlic powder
- 1 teaspoon coriander
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground thyme
- 1/4 teaspoon ground oregano
- Cut eggplant slices lengthwise and arrange on baking sheet.
- Mix all the spices together.
- On both sides of the eggplant slices, brush olive oil, season with salt, and sprinkle the prepared spices.
- Preheat the broiler or barbecue.
- Broil or grill until golden brown, about 2 minutes per side.
