Sausage Cabbage Soup
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 lb ground turkey
- 8 ounces link sausage, chopped
- 1 cup black beans
- 1 cup navy beans
- 1 (15 ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
- 2 teaspoons salt
- 1 teaspoon pepper
- 12 cups low sodium beef broth
- 3 cups cabbage, chopped
- 2 tablespoons vegetable oil
- Coat the bottom of a pan with vegetable oil and add the onion.
- Cook onions until soft and lightly browned.
- Add garlic and cook until aromatic.
- Add turkey and cook through.
- Combine all ingredients expect for cabbage into a large stockpot and simmer for 1-2 hours.
- Add cabbage and cook until soft.
