Henry's Homemade Vegetable Soup Recipe
- 1 pound lean grnd beef
- 1 c. minced celery
- 1 c. minced onion
- 1/2 c. minced carrots
- 1/2 c. minced bell pepper
- 1 garlic clove, chopped
- 3 beef bouillon cubes
- 2 (14 1/2 ounce.) cans beef broth
- 1 (10 3/4 ounce.) can tomatoes (whole or possibly cut up - don't drain)
- 1 sm. pkg. frzn English peas
- 1/2 c. barley
- 1 bay leaf
- Water
- Salt
- Pepper
- Cook grnd beef till well done.
- Drain, set aside.
- Chop celery, onions, carrots, bell pepper.
- Mince garlic.
- Combine all in large stock pot.
- Add in cooked grnd beef, bouillon cubes, beef broth, canned tomatoes, sufficient water to cover.
- Cook 45 min.
- Add in English peas, barley and bay leaf.
- Salt and pepper to taste.
- Cook additional 45 min.
- Remove the bay leaf.
- Serves four to six.
