Ultimate Grilled Sandwich
- 8 slices bacon, cooked
- 8 slices sourdough bread, 1/2-inch thick
- 8 slices swiss cheese, light, thinly sliced
- 2 plum tomatoes, cut into 16 thin slices
- 1 vidalia onion, sliced (you need approx 1 cup)
- 4 tablespoons light mayonnaise
- salt & pepper
- Place four slices of bread on counter top and layer ingredients - cheese, tomato slices, onion, bacon, salt & pepper, and another slice of cheese.
- Top with remaining bread slices.
- Spread 1/2 tablespoon mayonaisse over top of each sandwich.
- Cook mayonaisse side down, on medium-low heat, until the bottom is golden (this should take approx 3 minutes).
- Spread remaining mayonaisse on top, turn sandwiches over, and cook until bottom side is golden.
- Cut and serve.
