Surfin' Tuna Casserole
- 3 eggs
- 3/4 c. milk
- 2 c. Stove Top chicken flavor mix (in the canister)
- 1 c. thawed frozen peas
- 1 1/2 c. shredded Colby and Monterey Jack cheese, divided
- 1 (6 1/8 oz.) can chunk light tuna, drained
- 1/2 c. condensed cream of mushroom soup
- 1/4 c. chopped green onions
- 2 Tbsp. chopped pimiento
- Beat eggs in large bowl; stir in milk.
- Add remaining ingredients except 1/2 cup of the cheese; mix well.
- Pour mixture into 9-inch microwavable pie plate.
- Cover loosely with waxed paper.
- Microwave on High 5 minutes.
- Stir mixture thoroughly to completely mix center and outside edges; smooth top.
- Cover. Microwave 5 minutes or until center is no longer wet.
- Sprinkle with remaining 1/2 cup cheese; cover and let stand 5 minutes. Makes 6 servings.
- Preparation Time:
- 15 minutes.
- Cooking Time: 10 minutes.
