Low Fat Caesar

  1. Lay prosciutto on an oven tray, and bake at 180 degrees C fan-forced for 6-8 minutes until crisp.
  2. Remove to absorbent paper, and break into pieces.
  3. Cut bread into triangular pieces, and lightly spray with olive oil.
  4. Bake for 5 minutes until golden and crisp.
  5. Toss together the cos and dressing; pile onto serving platter or plates.
  6. Top with prosciutto, croutons, anchovies, spring onions, avocado, extra dressing and Parmesan.
  7. Serve immediately.
  8. OPTIONAL: Serve with a poached egg or lean grilled chicken breast for a more substantial salad.
