Blueberry Brunch Casserole

  1. Heat oven to 350 degrees F. Spray a 9 x 13 pan with cooking spray.
  2. In a large bowl, mix flour, sugar, salt and baking powder together.
  3. Mix eggs, butter and buttermilk together and pour into the bowl with the dry ingredients.
  4. Mix well.
  5. Add white chocolate chips; blend.
  6. Pour into prepared pan and spread.
  7. Using a knife, slice off pieces of cream cheese and place all over the top of the mixture.
  8. Pat down slightly.
  9. Pour blueberries all over the top.
  10. Bake for 45 minutes or till just set.
  11. While casserole is baking, make the sauce.
  12. Put sugar and cornstach in a saucepan and mix.
  13. Add water and stir, put on medium high heat and bring to a boil.
  14. Add blueberries and lower the temperature.
  15. Simmer for 6-8 minutes, until berries burst and sauce thickens a bit.
  16. Remove from heat, add butter and vanilla and stir.
  17. Serve the casserole with warm sauce.
