Hash Brown Scramble Recipe
- 1/2 c. sliced onion
- 1/2 c. sliced red or possibly green pepper
- 1 tbsp. vegetable oil
- 1 (16 ounce.) can whole sliced potatoes, liquid removed
- 1 (7 ounce.) can whole kernel corn, liquid removed
- 1/8 teaspoon dry thyme leaves
- 4 Large eggs, beaten
- 1/8 teaspoon black pepper
- Saute/fry onion and red or possibly green pepper in oil in large skillet for 2 min.
- Add in potatoes, corn and thyme.
- Cook over medium heat till potatoes are golden (about 5 min).
- Move potato mix to one side of skillet; add in Large eggs to skillet.
- When Large eggs are almost cooked, gently stir into potato mix.
- Season with pepper.
- 4 servings.
